This Paleo Taco Bowl is a healthy and delicious twist on traditional tacos. It's loaded with flavorful ground meat and a variety of fresh veggies, making it a perfect choice for a Paleo-friendly meal.
Ingredients:
- 1 lb ground beef or turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 cup cauliflower rice
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced black olives
- Lettuce leaves for serving
Instructions:
In a large skillet, cook the ground beef or turkey over medium heat until browned
Remove any excess fat
Add the diced onion and minced garlic to the skillet and saut for 2-3 minutes until they start to soften
Stir in the chopped bell pepper, diced zucchini, and cauliflower rice
Cook for an additional 5-7 minutes until the vegetables are tender
Season the mixture with chili powder, cumin, paprika, salt, and pepper
Mix well and cook for another 2-3 minutes
To serve, place a few lettuce leaves in each bowl
Spoon the taco mixture on top of the lettuce
Top with sliced avocado, halved cherry tomatoes, fresh cilantro, and sliced black olives
