Ingredients:
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup granulated sugar
- 4 large egg yolks
- 1/2 teaspoon vanilla extract
- 1/2 cup store-bought caramel sauce
- 1/2 teaspoon sea salt
Instructions:
In a saucepan, heat the milk and cream over medium heat until just simmering
In a separate bowl, whisk together the sugar and egg yolks until pale and creamy
Slowly pour the hot milk mixture into the egg mixture, whisking constantly
Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until thickened
Remove from heat and stir in the vanilla extract
Transfer the mixture to a bowl and let it cool to room temperature, then cover and refrigerate until chilled
Once chilled, churn the mixture in an ice cream maker according to manufacturer's instructions
When the gelato is almost done churning, drizzle in the caramel sauce and sprinkle in the sea salt
Transfer the gelato to a freezer-safe container and freeze until firm
Serve scoops of salted caramel gelato topped with additional caramel sauce and a sprinkle of sea salt
