Ingredients:
- 2 boneless, skinless chicken breasts, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 large sweet potato, peeled and diced
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 red bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons fresh lemon juice
- 1/4 cup chicken broth
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons grated Parmesan cheese optional
Instructions:
In a large skillet, heat olive oil over medium-high heat
Season diced chicken with paprika, garlic powder, salt, and pepper
Add seasoned chicken to the skillet and cook until browned and cooked through, about 5-6 minutes
Remove cooked chicken from the skillet and set aside
In the same skillet, add sweet potato cubes and cook until slightly tender, about 5 minutes
Add asparagus, red bell pepper, and cherry tomatoes to the skillet
Cook for an additional 5 minutes, or until vegetables are tender-crisp
Return cooked chicken to the skillet
Pour lemon juice and chicken broth over the chicken and vegetables
Stir to combine
Cook for another 2-3 minutes, allowing flavors to meld together
Sprinkle with chopped parsley and grated Parmesan cheese, if using
Serve hot and enjoy!
