Mint Chocolate Chip Buttercream Brownie Cookies



Mint Chocolate Chip Buttercream Brownie Cookies are the perfect combination of mint and chocolate. A luscious mint buttercream frosting fills soft and chewy brownie cookies, making them a delightful treat for any occasion.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup mint chocolate chips
  • Mint Buttercream Frosting:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon peppermint extract
  • 2 tablespoons milk
  • Green food coloring optional

Instructions:

Preheat your oven to 350F 175C

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth

Add the eggs one at a time, beating well after each addition

Stir in the vanilla extract

In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Fold in the chocolate chips and mint chocolate chips

Scoop the cookie dough onto a baking sheet lined with parchment paper or a silicone baking mat

Bake the cookies for 10-12 minutes or until the edges are set but the centers are still slightly soft

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely

For the Mint Buttercream Frosting: In a medium bowl, beat the softened butter until creamy

Gradually add the powdered sugar and continue to beat until smooth and fluffy

Stir in the peppermint extract and milk until the frosting reaches your desired consistency

If desired, add a few drops of green food coloring to achieve a minty green color

Once the cookies are completely cooled, spread or pipe the Mint Buttercream Frosting onto the flat side of one cookie and sandwich it with another cookie

Repeat until all cookies are sandwiched with the delicious buttercream
