Springtime Berry Blast Ice Cream Bars



For the warmer days ahead, these Springtime Berry Blast Ice Cream Bars are the perfect treat. They are packed with fresh berry flavors, creamy Greek yogurt, and crunchy granola.

Ingredients:

  • 2 cups mixed fresh berries such as strawberries, raspberries, and blueberries
  • 1/4 cup honey or maple syrup
  • 2 cups Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup granola
  • 1/2 cup shredded coconut optional
  • 1/4 cup dark chocolate chips optional

Instructions:

In a blender, puree the mixed berries with honey or maple syrup until smooth

In a bowl, mix Greek yogurt and vanilla extract until well combined

Pour a layer of the berry mixture into popsicle molds or an ice cube tray, filling each mold about 1/3 full

Add a layer of Greek yogurt mixture on top of the berry layer, filling each mold about 2/3 full

Sprinkle granola evenly on top of the yogurt layer, pressing gently to adhere

If desired, sprinkle shredded coconut and dark chocolate chips over the granola layer

Insert popsicle sticks into each mold and freeze for at least 4 hours or until fully set

Once frozen, remove the ice cream bars from the molds by running them under warm water for a few seconds

Serve immediately and enjoy!
