A flavorful and nutritious rice dish loaded with mushrooms, spinach, and tomatoes, seasoned with aromatic herbs and spices.
Ingredients:
- 2 cups cooked rice
- 1 cup sliced mushrooms
- 1 cup chopped spinach
- 1 cup diced tomatoes
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes optional
- 2 tablespoons grated parmesan cheese optional
Instructions:
Heat olive oil in a skillet over medium heat
Add minced garlic and cook until fragrant, about 1 minute
Add sliced mushrooms and cook until they release their moisture and become tender, about 5 minutes
Stir in chopped spinach and diced tomatoes, and cook until spinach wilts and tomatoes soften, about 3 minutes
Season with salt, black pepper, dried oregano, paprika, and red pepper flakes if using
Stir well
Add cooked rice to the skillet and toss everything together until well combined and heated through, about 2-3 minutes
Serve hot, optionally sprinkled with grated parmesan cheese on top
